Ingredients/Components
- red wine vinegar - 2 Tbsp
- chopped onion - 1 c
- catsup - 2 Tbsp
- olive oil - 1 tsp
- minced garlic - 1 Tbsp
- mushrooms - 1/2 c
- black olives - 6 item
- green bell pepper - 2 c
- , cut into pieces - 1 small
- cherry tomato halves - 1 c
- coarsely crumbled Feta cheese - 1/2 c
How to make mediterranean vegetables:
Put eggplant in a 2-quart microwave-safe dish. Cover and microwave 6 minutes on High. Put oil, onions and peppers in same dish. Stir to mix; cover and microwave on High 4 or 5 minutes. Stir in eggplant and remaining ingredients, except Feta Cheese. Cover and microwave on High 6 to 8 minutes. Sprinkle cheese over top. Cover and let stand 5 minutes.
