Mandarin chicken
Ingredients/Components
- salt - 1 tsp
- flour - 1 Tbsp
- cider vinegar - 1 tsp
- garlic powder - 1/4 tsp
- diced green pepper - 1/2 c
- soy sauce - 1/4 c
- onion salt - 1 tsp
- prepared mustard - 1 tsp
- corn oil - 1/4 c
- ground pepper - 1/2 tsp
- Accent - 1 tsp
- crushed pineapple - 1 c
- whole broiler-fryer chicken breasts, halved - 3 item
- can mandarin orange segments, drained 1/2 c - 1 oz
How to make mandarin chicken:
Sprinkle breasts with salt and pepper. Heat corn oil in frypan over medium heat. Place chicken in pan, skin side down; saute until golden brown. In a bowl, mix together orange juice, soy sauce and flour until smooth. Stir in pineapple, onion salt, Accent, mustard, vinegar and garlic powder. Place browned chicken in large, shallow baking dish; pour sauce over chicken. Cover; bake in a 350° oven for 1 hour, basting occasionally. Add orange segments and green pepper; continue baking 5 minutes, or until chicken is done. Serve sauce over rice. Makes 6 servings.Recipe categories: Chicken, Main dish, Poultry.
