salt - 1/2 tsp
flour - 2 Tbsp
butter - 6 Tbsp
nutmeg - 1/8 tsp
egg yolks - 4 item
light cream - 2 c
Madeira - 1/2 c
dash of Tabasco - 1 item
cooked lobster meat, diced - 2 c

How to make lobster newburg:

Melt butter in skillet. Add lobster meat and cook 3 minutes, stirring occasionally. Stir in flour and continue cooking 1 minute, stirring constantly. Add wine and cook until heated through. Set aside. Put remaining ingredients in blender, cover and blend at slow speed until mixed. Add ingredients to lobster and cook, stirring constantly until thickened.

This is a very elegant dish and should be served with fruit, salad, breadsticks and broccoli with lemon butter.
