Little cheesecakes
Ingredients/Components
- sugar - 3/4 c
- eggs - 2 item
- vanilla - 1 tsp
- melted butter - 1/3 c
- can cherry pie filling - 1 item
- lemon juice - 1 tsp
- cream cheese, softened at room temperature - 1 lb
- about 20 graham crackers
- vanilla wafers or Graham Cracker Pie Crust - 1 lb
How to make little cheesecakes:
Crust:3 tsp. sugar1/3 c. melted butter about 20 graham crackers Combine first 5 ingredients in a large bowl. Beat at high speed with hand mixer for 5 minutes. Line mini cupcake pans with liners. Put 1 wafer in bottom or press in a layer of graham cracker mixture. Place a rounded tablespoonful of cheesecake filling in each cup. Bake in preheated oven at 350° for about 15 minutes or until thin cracks appear on top of each cake. Remove from oven and cool. Drop 1 teaspoon cherry pie filling on each cake. Makes 36 cakes.For Graham Cracker Pie Crust: Crumble crackers. Blend thoroughly with sugar and melted butter.
