Light banana bread
Ingredients/Components
- sugar - 1 c
- salt - 1/8 tsp
- baking powder - 1/4 tsp
- baking soda - 1/2 tsp
- all-purpose flour
- egg whites - 2 item
- cooking oil - 1/4 c
- ground cinnamon - 1/2 tsp
- ground nutmeg - 1/4 tsp
- currants - 1/2 c
- nonstick spray coating - 1 item
- mashed ripe bananas about 2 large or 3 small - 1 c
How to make light banana bread:
Stir together dry ingredients; set aside. In mixing bowl, beat together egg whites and sugar (this can be done by hand); add mashed banana. Add oil and mix well. Stir flour mixture into banana mixture. Gently fold in currants.Spray an 8 x 4 x 2-inch loaf pan with nonstick coating. Transfer batter to prepared pan. Bake at 350° for 55 to 60 minutes. Cool in pan for 10 minutes; remove from pan. Cool thoroughly on a wire rack. Yields 16 servings; about 3 1/2 grams fat per serving.
