Ingredients/Components
- salt - 1/4 tsp
- baking soda - 1/2 tsp
- egg - 1 item
- all-purpose flour
- margarine - 1/2 c
- lemon juice
- grated lemon rind - 2 tsp
- firmly packed light brown sugar - 3/4 c
- vegetable cooking spray - 1 item
How to make lemon wafers:
Cream margarine; gradually add sugar, beating until light and fluffy. Add egg, lemon rind and lemon juice, beating well. Combine flour, soda and salt; add to creamed mixture, mixing just until blended. Drop dough by rounded teaspoonful, about 2 inches apart, on cookie sheets coated with cooking spray. Bake at 400° for 8 to 10 minutes. Remove from cookie sheet immediately and cool on wire rack.
