Ingredients/Components
- flour plus 1 Tbsp - 2 c
- confectioners sugar plus more for topping - 1/2 c
- eggs - 4 item
- lemon juice - 6 Tbsp
- pecans - 1 c
- sticks butter, softened - 2 item
- sugar - 2 c
- baking powder - 1/2 tsp
How to make lemon squares:
Mix together 2 cups flour, butter and confectioners sugar and press into bottom of 10 x 14-inch pan. Bake at 325° for 15 minutes.In a mixing bowl, beat eggs slightly, then add sugar, lemon juice, remaining tablespoon of flour, baking powder and pecans. Mix and pour on top of pastry. Bake at 325° for 40 to 50 minutes. Sprinkle with additional confectioners sugar. Cool, then cut into 2 x 1-inch rectangles. Makes 70.
