Lemon sponge pie
Ingredients/Components
- sugar - 1 c
- milk - 1 c
- melted butter - 2 Tbsp
- all-purpose flour - 3 Tbsp
- juice of 1 lemon
- unbaked 9-inch pie shell - 1 item
- finely grated rind of 1 lemon
- eggs, beat yolks and then beat whites - 2 item
How to make lemon sponge pie:
Combine sugar and flour. Stir in lemon juice and rind; beat in egg yolks, then melted butter. Stir in milk. Beat egg whites with salt until fairly stiff peaks form, then fold into lemon mixture until no streaks of white show. Pour into unbaked pie shell. Bake at 450° for 10 minutes, then at 350° for 20 minutes or until crust is lightly browned and filling puffy and touched with brown. Cool 15 minutes before cutting.
