  • salt - 1/4 tsp
  • baking powder - 1 tsp
  • baking soda - 1/2 tsp
  • all-purpose flour
  • egg whites - 2 item
  • margarine, softened - 6 Tbsp
  • lemon juice
  • poppy seed - 2 Tbsp
  • plain low-fat yogurt - 1/2 c
  • skim milk - 1/2 c
  • fresh lemon juice - 3 tsp
  • grated lemon peel - 1 Tbsp
  • firmly packed light brown sugar - 1/2 c
  • whole egg - 1 item
  • Grease and flour Bundt pan

How to make lemon poppy seed cake:

Preheat oven to 350°. Grease and flour Bundt pan. Beat margarine in large bowl until fluffy. Beat in brown sugar, yogurt, whole egg, egg whites and 3 teaspoons lemon juice. Set aside. Combine flour, baking powder, baking soda and salt in medium bowl. Add flour mixture to margarine mixture alternately with milk, beginning and ending with flour mixture. Mix in poppy seed and lemon peel. Pour batter into prepared pan. Bake 40 minutes or until golden brown. Cool 10 minutes. Remove cake from pan and cool on wire rack.Glaze:1 c. powdered sugar2 1/2 Tbsp. lemon juice1/2 tsp. poppy seed Mix to desired consistency. Spoon over cake and sprinkle with poppy seed.
