Lemon poppy muffins
Ingredients/Components
- pkg - 1 oz
- eggs, separated - 5 item
- baking powder
- baking soda - 1 tsp
- margarine - 1 c
- flour, sifted
- lemon juice - 3/4 c
- poppy seed - 1 c
- grated lemon peel - 1 Tbsp
- sugar, divided
How to make lemon poppy muffins:
Preheat oven to 350°. Beat margarine, 1 1/2 cups sugar and cream cheese at medium speed with mixer until light and fluffy. Blend in egg yolks and lemon juice. Add combined flour, baking powder and baking soda and mix well. Beat in poppy seed and peel. Set aside. Beat egg whites until foamy. Gradually add reserved 1/4 cup sugar, beating until soft peaks form. Fold egg whites into batter. Pour into greased muffin pan. Bake 55 minutes or until toothpick inserted in center comes out clean.
