Ingredients/Components

  • salt - 1/2 tsp
  • flour - 3 Tbsp
  • margarine - 1 Tbsp
  • lemon juice - 3 Tbsp
  • pepper - 1/4 tsp
  • chicken broth - 1 c
  • total - 4 skinless,
  • medium onion - 1 item
  • olive oil - 2 Tbsp
  • parsley optional - 2 Tbsp
  • thyme - 1/2 tsp
  • lemon wedges optional - 1 item

How to make lemon chicken with thyme:

In a plastic or paper bag, combine the flour, salt and pepper and shake to mix. Add the chicken and shake to coat lightly. Remove the chicken and reserve the excess flour. In large skillet, warm 1 tablespoon of the olive oil over medium heat. Add chicken and brown lightly on one side, about 5 minutes. Add remaining 1 tablespoon oil, turn chicken over and brown 5 minutes on the second side. Remove chicken from pan. Coarsely chop the onion. Add margarine to the skillet. Add onion and cook, stirring about 2 to 3 minutes until onion is softened. Stir in seasoned, reserved flour and cook, stirring until flour is completely incorporated, about 1 minute. Add the broth, 2 tablespoons of the lemon juice and the thyme and bring the mixture to a boil, stirring constantly.

Return the chicken to the skillet, reduce the heat to medium-low and cover, cooking the chicken in the sauce. Cook until chicken is tender, about 15 minutes. Put chicken on serving plate and (according to your like for lemon) stir the remaining 1 tablespoon lemon juice into the sauce for additional lemon flavor and spoon sauce over chicken. Serve with lemon wedges and parsley if desired. Serve with mashed potatoes of flat noodles. Serves 4.
