- cup Butter - 1/4 item
- Leeks, trimmed, carefully washed and - 3 item
- thinly sliced - 1 item
- cans Chicken Stock - 3 item
- Potatoes, peeled, quartered and thinly - 2 lb
- sliced Yukon Golds work well - 1 item
- Salt and White pepper - 1 item
How to make leek and potato soup:
In large saucepan, melt butter. Add leeks and saut?© until they begin to soften, 3-5 minutes. Add stock & potatoes, bring to boil. Reduce heat, simmer until tender, about 20 minutes. Season to taste with salt and white pepper.Recipe categories: Soups & stews, Main dish, One Dish meal.
