Beer and cheese soup
Ingredients/Components
- flour - 1/2 c
- butter - 3/4 c
- dry mustard - 1 tsp
- grated Parmesan cheese - 2 Tbsp
- salt and pepper to taste - 1 item
- diced celery - 1 c
- diced carrots - 1 c
- Cheddar cheese, grated - 6 oz
- diced onions - 1 c
- diced mushrooms - 1 c
- bunch broccoli - 1 item
- chicken or vegetable stock - 5 c
- beer use a can or bottle and save a swallow for the cook!
How to make beer and cheese soup:
Saut the diced vegetables in butter. Mix flour and mustard into saut?Šed vegetables. Add the chicken or vegetable stock to mixture and cook for 5 minutes. Break broccoli into small flowerets; cut stems into bite-size pieces. Steam until tender-crisp. Add beer and cheeses to the soup. Simmer 10 to 15 minutes. Check seasonings.To serve, place some broccoli into a soup bowl and ladle the soup over it.
