Layered sweet potato and cranberry casserole
Ingredients/Components
- cinnamon - 1/2 tsp
- chopped nuts
- brown sugar - 1 Tbsp
- butter - 2 Tbsp
- melted butter - 2 Tbsp
- packed light brown sugar - 1/4 c
- orange juice - 1/4 c
- fresh cranberries - 1 c
- large sweet potatoes - 4 item
How to make layered sweet potato and cranberry casserole:
Topping:1/2 c. chopped nuts2 Tbsp. melted butter1 Tbsp. brown sugar1/2 tsp. cinnamon Boil sweet potatoes until tender. Drain and cool slightly. Peel and cut into 1/2-inch slices. Arrange 1/2-inch slices in greased casserole. Sprinkle with 1/2 cup brown sugar. Dot with butter and layer with 1/2 cup cranberries. Cover with remaining sweet potatoes. Sprinkle with remaining brown sugar and cranberries. Pour orange juice over casserole. Cover and bake 45 minutes at 350°.Mix topping and add for last 5 minutes of baking time.
