Layered spinach salad
Ingredients/Components
- Spanish peanuts - 1/2 c
- hard-boiled eggs, sliced - 2 item
- fresh spinach - 1/2 3/4
- green onion, thinly sliced - 1/4 c
- Ranch style salad dressing - 3/4 c
- medium cucumber, thinly sliced - 1/2 item
- radishes, thinly sliced - 1/2 c
- slices bacon, crispy fried and crumbled - 5 item
How to make layered spinach salad:
Remove and discard spinach stems. Rinse leaves well; drain and pat dry. Tear spinach into bite-sized pieces and arrange evenly in salad bowl. Evenly lay cucumber slices, radishes, green onion and eggs. Spread dressing over top. Cover; chill up to 24 hours. Just before serving, sprinkle with bacon and peanuts.
