Ingredients/Components

  • Spanish peanuts - 1/2 c
  • hard-boiled eggs, sliced - 2 item
  • fresh spinach - 1/2 3/4
  • green onion, thinly sliced - 1/4 c
  • Ranch style salad dressing - 3/4 c
  • medium cucumber, thinly sliced - 1/2 item
  • radishes, thinly sliced - 1/2 c
  • slices bacon, crispy fried and crumbled - 5 item

How to make layered spinach salad:

Remove and discard spinach stems. Rinse leaves well; drain and pat dry. Tear spinach into bite-sized pieces and arrange evenly in salad bowl. Evenly lay cucumber slices, radishes, green onion and eggs. Spread dressing over top. Cover; chill up to 24 hours. Just before serving, sprinkle with bacon and peanuts. Yield: 6 servings.
