Overnight layered chicken salad



  • sugar - 1 Tbsp
  • pkg - 2 oz
  • Spanish peanuts - 1/2 c
  • ground ginger - 1/2 tsp
  • cooked chicken - 4 c
  • curry powder - 2 tsp
  • mayonnaise
  • bean sprouts - 1/4 lb
  • can water chestnuts - 1 item
  • sliced green onions and tops - 1/2 c
  • iceberg lettuce - 6 c
  • medium cucumber, thinly sliced - 1 item
  • to 18 cherry tomatoes, halved - 12 item

How to make overnight layered chicken salad:

Dressing:2 c. mayonnaise2 tsp. curry powder1/2 tsp. ground ginger1 Tbsp. sugar Spread lettuce in shallow 4-quart serving dish. Top with bean sprouts, chestnuts, onions, cucumber and chicken. Pat pea pods dry and put on top. In a small bowl, combine dressing ingredients. Spread over pea pods. Cover and refrigerate overnight. Just before serving, garnish with peanuts and tomato halves.
