Ingredients/Components

  • salt - 1/4 tsp
  • water - 1/2 c
  • pepper - 1/4 tsp
  • chopped onion - 1/2 c
  • cloves garlic, minced - 2 item
  • Parmesan cheese - 2 Tbsp
  • parsley flakes
  • oregano - 1/2 tsp
  • shredded Mozzarella cheese - 1/2 c
  • lasagna noodles - 4 item
  • basil, crushed - 1 tsp
  • fennel seed - 1/2 tsp
  • slightly beaten egg white - 1 item
  • finely chopped carrot - 1/2 c
  • can low sodium tomato paste - 1 oz
  • lean ground beef or ground turkey - 4 oz
  • low-fat cottage cheese or Ricotta cheese - 1 c

How to make lasagna:

Sauce: In a medium saucepan, cook meat, onion, carrot and garlic until meat is brown. Drain. Stir in tomato sauce, paste, water, basil, oregano, fennel, salt and pepper. Bring to a boil. Reduce heat. Cover and simmer 10 minutes. Meanwhile cook noodles according to directions and drain.

Cheese Mixture: Mix egg white and cottage cheese. Spray a 10 x 6 x 2-inch baking dish with nonstick coating. Place two noodles in dish. Spread with half cheese mixture. Top with half sauce and half Mozzarella cheese. Repeat layers. Sprinkle with Parmesan cheese. Bake uncovered 25 to 30 minutes at 375°. Let stand for 10 minutes.
