Hush puppies
Ingredients/Components
- sugar - 2 Tbsp
- salt - 1/8 tsp
- water - 1 Tbsp
- buttermilk - 1/2 c
- baking powder - 1 tsp
- baking soda - 1/4 tsp
- all-purpose flour - 1/4 c
- beaten egg - 1 item
- finely chopped green onion - 1/4 c
- corn meal - 3/4 c
- shortening or cooking oil for deep fat frying - 1 item
How to make hush puppies:
In a small mixing bowl, stir together egg, buttermilk, green onions and water. In a medium mixing bowl, combine flour, corn meal, sugar, baking powder, baking soda and salt. Add egg mixture to dry ingredients. Stir just until moistened. In a heavy saucepan or deep fat fryer, heat about 2 inches oil to 375°. Drop batter by tablespoons into hot oil. Fry a few at a time, about 2 minutes, or until golden brown, turning once. Drain on paper towels. Keep warm in 325° oven while frying remainder.
