  • sugar - 2 c
  • cinnamon - 1 tsp
  • vanilla - 1 tsp
  • chopped pecans - 1 c
  • vanilla extract
  • salt - 1 tsp
  • eggs, beaten - 3 item
  • baking soda - 1 tsp
  • vegetable oil - 1 c
  • all-purpose flour - 3 c
  • stick butter - 1 item
  • box confectioners sugar - 1 oz
  • chopped nuts if desired - 1/2 c
  • crushed pineapple, undrained - 1 can
  • chopped bananas - 2 c
  • butter flavor - 1 tsp
  • Mix by hand

How to make hummingbird cake:

Note: Do not use electric beater. Mix by hand. Sift together flour, salt, soda and cinnamon into mixing bowl. Add sugar and stir to mix. Add oil, vanilla and beaten eggs, mixing well. Add nuts, mashed bananas and pineapple, mixing just until well blended. Place in greased and floured 10-inch tube pan. Bake for 1 hour and 20 minutes in a 350° preheated oven. Cake will crack slightly on top. May also be baked in 3 nine-inch layer pans for 25 to 30 minutes or until it tests done. Cool and frost with Cream Cheese Frosting.Cream Cheese Frosting:1 (8 oz.) cream cheese1 stick butter1 (16 oz.) box confectioners sugar1 tsp. vanilla1/2 c. chopped nuts (if desired) Cream butter and cream cheese. Add sugar and vanilla. Mix well until smooth. Spread on cooled cake and sprinkle with chopped nuts.

Note: If layer cake is desired, double frosting ingredients.
