  • margarine - 1/2 c
  • bananas - 2 c
  • crushed pineapple - 1 (8
  • pecans, chopped - 1 c
  • Add eggs and oil, stirring until moistened; do not beat

How to make hummingbird cake:

Combine first 5 ingredients in a large bowl. Add eggs and oil, stirring until moistened; do not beat. Stir in vanilla, pineapple, 1 cup pecans and bananas. Spoon batter into 3 greased 9-inch round pans. Bake at 350° for 25 to 30 minutes. Cool in pans 10 minutes and remove. When completely cool, spread frosting between layers, top and sides. Sprinkle 1/2 cup pecans on top.Cream Cheese Frosting:1 (8 oz.) pkg. cream cheese1/2 c. margarine1 tsp. vanilla1 (16 oz.) pkg. powdered sugar
