- chopped pecans - 1 c
- vanilla extract
- salt - 1/2 tsp
- eggs, beaten - 3 item
- baking soda - 1 tsp
- vegetable oil - 3/4 c
- all-purpose flour - 3 c
- margarine, softened
- mashed bananas
- ground cinnamon - 1 tsp
- can crushed pineapple with juice - 1 oz
- box powdered sugar - 1 item

How to make hummingbird cake:
Frosting:1/2 c. margarine, softened1 (8 oz.) softened cream cheese1 box powdered sugar1 tsp. vanilla extract Combine flour, soda, salt, sugar and cinnamon; add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, 1 cup pecans and bananas. Pour batter into 3 greased and floured 9-inch round cake pans. Bake at 350° for 25 minutes or so. Cool in pans for 10 minutes and remove.Frosting: Cream butter and cream cheese; add powdered sugar, beating until light and fluffy. Stir in vanilla. Frost between layers, top and sides. Sprinkle with 1/2 cup pecan pieces.
