Ingredients/Components
- liquid smoke - 1 tsp
- mustard seed
- hamburger or venison burger - 5 lb
- coarse ground pepper
- Morton Tender Quick salt - 5 tsp
- garlic salt if you would like
How to make homemade salami:
Mix and knead like bread dough. Refrigerate 24 hours. Knead again, refrigerate again and knead again. Do this again for 1 more day (3 days total). On the fourth day, form into 4 logs.Bake 9 hours (150°) in a broiler pan so fat can drip. Turn once. Can be frozen. Keeps 4 to 5 weeks in refrigerator.
