Ingredients/Components
- sugar
- eggs - 4 item
- vanilla extract - 1 tsp
- sticks margarine - 2 item
- baking powder
- cream cheese, softened - 8 oz
- chopped pecans, divided - 1 c
- Add eggs one at a time, beating well after each
- sifted plain flour, divided
- red or green maraschino cherries, well drained - 1 c
- milk or use 2 Tbsp - 1/4 c
How to make holiday cake:
Cream margarine, cheese, sugar and vanilla until light and fluffy. Add eggs one at a time, beating well after each. Sift 2 cups flour with baking powder and add slowly to creamed mixture. Combine remaining 1/4 cup flour with cherries and 1/2 cup pecans. Fold into batter. Sprinkle remaining pecans into bottom of a well greased (no flour) tube pan. Pour in batter and bake at 325° for 1 hour or until done. Cool in pan 5 minutes, then remove to finish cooling.Glaze:1 1/2 c. powdered sugar1/4 c. milk or use 2 Tbsp. milk and 2 Tbsp. cherry juice Mix glaze and pour over completely cooled cake.
