Hearty baked potato salad
Ingredients/Components
- mayonnaise - 1/2 c
- parsley - 2 Tbsp
- red potatoes - 8 item
- can Cheddar cheese soup - 1 item
- strips bacon, cooked, drained and crumbled - 4 item
- onion optional - 1/2 c
- sour cream or plain yogurt - 1/2 c
How to make hearty baked potato salad:
Peel potatoes; boil until tender. Cut in 1/2 to 1-inch chunks. Spread evenly into baking dish. Combine onions, soup, parsley, mayonnaise and sour cream; pour over potatoes. Sprinkle bacon on top; garnish with paprika. Cover with foil and bake at 350° for 1 hour.Recipe categories: Low protein, Low cholesterol, Side dish.
