Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- eggs - 2 item
- vanilla - 2 tsp
- sour cream - 1/2 c
- salt - 1 tsp
- chopped nuts - 1 c
- flour - 2 c
- oil - 1/2 c
- soda - 1/2 tsp
- baking soda - 2 tsp
- raisins - 1 c
- apples, peeled and chopped into 1/4-inch pieces - 4 c
How to make harvest cake:
Sour Cream Topping:1 c. sugar1/2 tsp. soda1/2 c. sour cream Pour sugar, eggs, oil, salt, vanilla, nuts and cinnamon into a mixing bowl and beat until well blended. To this mixture, add soda and flour mixture and mix well. With a large spoon, beating by hand, blend in apples. Dough will be heavy and thick. Spread dough into a greased 9 x 13 x 2-inch pan and bake 45 minutes at 350°. While cake is still warm, ice with Sour Cream Topping.Sour Cream Topping: Combine ingredients in a saucepan and cook over medium heat. Stir constantly until mixture comes to a boil. Remove from heat. Prick cake all over with fork and pour topping over cake. Sprinkle with chopped nuts.
