Ingredients/Components

  • sugar - 3 c
  • shortening - 3/4 c
  • eggs - 4 item
  • cooked sweet potatoes - 2 c
  • chopped nuts optional - 1 c
  • frozen orange juice, thawed - 1 (6
  • flour
  • salt - 1 tsp
  • each soda, cinnamon and nutmeg - 2 tsp
  • allspice - 1/4 tsp
  • ground cloves - 1/2 tsp

How to make harvest bread:

Cream sugar and shortening. Add eggs, potatoes and orange juice. Sift together all dry ingredients. Add to creamed mixture and mix well. Add nuts. Bake in 4 greased and floured 1 pound coffee cans. Do not use pans, bread will not turn out right. Bake at 350° for 45 minutes. Yield: 4 cakes.
