Ingredients/Components

  • milk - 1/2 c
  • butter or margarine - 2 Tbsp
  • salt - 1 tsp
  • water - 4 c
  • eggs, beaten - 4 item
  • black pepper - 1/4 tsp
  • quick-cooking grits - 1 c
  • plus 1/2 c - 1 c

How to make grits casserole:

In a large saucepan, bring the water to a boil. Add the salt and pepper. Gradually stir in the grits. Lower the heat and simmer, stirring occasionally, for 5 to 7 minutes. Remove from the heat and stir in the butter and 1 cup cheese.

Preheat the oven to 350°. In a small bowl, mix the eggs with the milk and add to the grits; stir. Pour the grits into a greased, 2-quart casserole dish. Top the casserole with the remaining 1/2 cup cheese. Bake for one hour. Yield: 8 to 10 servings.
