Ingredients/Components

  • sugar - 3/4 c
  • vanilla - 1/2 tsp
  • salt - 1/8 tsp
  • egg yolks - 4 item
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • pinch of salt - 1 item
  • egg whites - 2 item
  • sifted flour - 1 c
  • cream of tartar - 1/8 tsp
  • stiffly beaten egg whites - 4 item
  • strained grapefruit juice - 1/2 c
  • Stir in grapefruit juice and baking soda
  • grapefruit juice water - 1/3 c

How to make grapefruit cake:

Beat egg yolks until light; add sugar and continue beating until smooth. Stir in grapefruit juice and baking soda. Sift together flour, baking powder and salt. Add to egg yolk mixture.

Beat egg whites until stiff, gradually adding 1/4 cup sugar. Carefully fold into batter. Pour into ungreased tube pan and bake 50 to 60 minutes at 300°. Invert and cool in pan. Frost with Boiled Icing.Basic Boiled Icing:1 c. sugar1/8 tsp. cream of tartar1/3 c. grapefruit juice (water)2 egg whites1/2 tsp. vanilla Mix sugar, cream of tartar and juice (water) together in small saucepan. Keep covered for first 3 minutes of cooking to prevent formation of crystals on pan. Beat eggs until stiff enough to peak. Boil syrup without stirring until 242°. Pour hot syrup in a small stream over egg whites and continue to beat until frosting is stiff. Add vanilla.

For Grapefruit Cake, add 1 teaspoon grated rind.
