How to make gnocchi:
*Cook like any other macaroni until they're done. Serve with your favorite tomato sauce.Take most of flour and pour onto a kneading board. Make a "well" in center with your hands and dump Ricotta in. (If Ricotta is very wet, you may need more flour.) Knead well until mixture forms a dough. Roll into a large ball; put in a plastic bag and seal. Let sit for awhile.
Later, pull off a chunk of dough and roll into a long strip, about 1/2-inch wide. Slice strip into 1/4-inch pieces.
Roll each piece of dough all the way over with your finger, forming a small pocket. Layer gnocchi with waxed paper and flash freeze.
Place in a bag in freezer until ready to use.
