How to make german potato pancakes:
Peel and wash potatoes in cold water; dry with paper towels. Potatoes and onion may be grated by hand (traditional method) or diced and slowly dropped into blender until all potatoes are grated. Combine grated potatoes and onion in bowl with egg, flour, salt and pepper. Mix thoroughly. Heat 1/4-inch of oil in electric skillet to 400°. Using a ladle or large spoon, drop potato batter into hot oil (one scoop per pancake). Fry pancakes until nicely browned on both sides. Remove from skillet and place on paper towels for a few seconds to drain excess oil. Serve hot with sour cream or applesauce. Serves 4 to 6.Recipe categories: Pancakes and waffles, Breakfast, Appetizers.
