Ingredients/Components

  • cans chopped, stewed tomatoes - 3 item
  • large onion, chopped - 1 item
  • large green pepper, chopped - 1 item
  • large cucumber, chopped - 1 item
  • or 3 cloves garlic, minced - 2 item
  • or 2 Hawaiian peppers, seeded and minced - 1 item
  • small bunch cilantro, chopped fine - 1 item
  • Hawaiian rock salt to taste - 1 item
  • V-8 juice - 2 c
  • olive oil - 1/4 c
  • wine vinegar - 1/4 1/2
  • garlic croutons - 1 item

How to make gazpacho:

In a blender or food processor, blend tomatoes. Add fine chopped vegetable, garlic, Hawaiian peppers and cilantro. Add V-8 juice, olive oil, vinegar and salt. Cover and chill. Garnish with garlic croutons.
