Gazpacho
Ingredients/Components
- cans chopped, stewed tomatoes - 3 item
- large onion, chopped - 1 item
- large green pepper, chopped - 1 item
- large cucumber, chopped - 1 item
- or 3 cloves garlic, minced - 2 item
- or 2 Hawaiian peppers, seeded and minced - 1 item
- small bunch cilantro, chopped fine - 1 item
- Hawaiian rock salt to taste - 1 item
- V-8 juice - 2 c
- olive oil - 1/4 c
- wine vinegar - 1/4 1/2
- garlic croutons - 1 item
How to make gazpacho:
In a blender or food processor, blend tomatoes. Add fine chopped vegetable, garlic, Hawaiian peppers and cilantro. Add V-8 juice, olive oil, vinegar and salt. Cover and chill. Garnish with garlic croutons.Recipe categories: Appetizers, Vegan, Soups & stews.
