Ingredients/Components

  • salt - 2 tsp
  • oil - 2/3 c
  • pepper - 1/8 tsp
  • bay leaf - 1 item
  • wine vinegar - 2 Tbsp
  • olive oil - 2 Tbsp
  • dash of oregano - 1 item
  • white wine - 2 Tbsp
  • large onion, chopped - 1 item
  • rice - 1 item
  • green pepper - 1 item
  • black beans - 1 lb
  • white vinegar - 2 tsp
  • dash of cumin - 1 item

How to make black beans and rice:

Soak beans overnight. Drain. Cook beans in 10 cups water with 1/2 chopped green pepper. Saute beans in 2/3 cup oil with chopped onion and remaining 1/2 green pepper, chopped. Puree one cup of beans.

To pot of sauteed vegetables and beans add the remaining ingredients, except the rice. Simmer over medium-low heat for one hour. Prepare rice. Serve bean mixture over rice.
