Black beans and rice
Ingredients/Components
- salt - 2 tsp
- oil - 2/3 c
- pepper - 1/8 tsp
- bay leaf - 1 item
- wine vinegar - 2 Tbsp
- olive oil - 2 Tbsp
- dash of oregano - 1 item
- white wine - 2 Tbsp
- large onion, chopped - 1 item
- rice - 1 item
- green pepper - 1 item
- black beans - 1 lb
- white vinegar - 2 tsp
- dash of cumin - 1 item
How to make black beans and rice:
Soak beans overnight. Drain. Cook beans in 10 cups water with 1/2 chopped green pepper. Saute beans in 2/3 cup oil with chopped onion and remaining 1/2 green pepper, chopped. Puree one cup of beans.To pot of sauteed vegetables and beans add the remaining ingredients, except the rice. Simmer over medium-low heat for one hour. Prepare rice. Serve bean mixture over rice.
