Ingredients/Components
- sugar - 1/3 c
- baking powder - 1 Tbsp
- vegetable oil - 1/4 c
- all-purpose flour - 1 c
- ground cinnamon - 1 tsp
- blueberries - 1 c
- skim milk - 1 c
- egg whites, slightly beaten - 2 item
- Kretschmer honey wheat germ - 1 c
- mashed banana or chopped apple - 1 item
How to make fruit muffins:
Heat oven to 400°. Line 12 muffin cups with paper baking cups or lightly grease bottoms only with nonstick cooking spray. Combine first 5 ingredients. Add combined milk, oil and egg whites; mix just until dry ingredients are moistened. Stir in fruit. Fill prepared muffin cups almost full. Bake 20 to 25 minutes or until golden brown. Serve warm or store tightly wrapped in freezer. To reheat, microwave on High about 30 seconds per muffin.Recipe categories: Breads, Quick breads, Muffins.
