Ingredients/Components

  • eggs, beaten - 6 item
  • pepper - 1/2 tsp
  • clove garlic, minced - 1 item
  • mushrooms, sliced - 1/3 lb
  • olive oil - 3 Tbsp
  • salt to taste - 1 item
  • freshly grated Parmesan cheese - 1/4 c
  • bell pepper, diced - 1/2 item
  • cooked broccoli or any leftover vegetables
  • leftover meat, cubed chicken, turkey, ham, beef - 1/2 lb
  • shredded cheese Cheddar, Swiss any kind

How to make frittata:

Heat oil in large frying pan or Dutch oven. Add vegetables, mushrooms, garlic and bell pepper. Stir, cover and cook for 3 minutes. In a bowl, combine meat, eggs, salt and pepper and cheese. Stir into the vegetable mixture. Pour into a 3-quart casserole dish and bake for 20 minutes at 350°. Top with Parmesan cheese and bake for 5 minutes longer. Yield: 4 to 5 servings.
