Ingredients/Components
- eggs, beaten - 6 item
- pepper - 1/2 tsp
- clove garlic, minced - 1 item
- mushrooms, sliced - 1/3 lb
- olive oil - 3 Tbsp
- salt to taste - 1 item
- freshly grated Parmesan cheese - 1/4 c
- bell pepper, diced - 1/2 item
- cooked broccoli or any leftover vegetables
- leftover meat, cubed chicken, turkey, ham, beef - 1/2 lb
- shredded cheese Cheddar, Swiss any kind
How to make frittata:
Heat oil in large frying pan or Dutch oven. Add vegetables, mushrooms, garlic and bell pepper. Stir, cover and cook for 3 minutes. In a bowl, combine meat, eggs, salt and pepper and cheese. Stir into the vegetable mixture. Pour into a 3-quart casserole dish and bake for 20 minutes at 350°. Top with Parmesan cheese and bake for 5 minutes longer.
