Ingredients/Components
- salt - 1 item
- oil - 1/4 c
- soy sauce
- old fashioned rice, cooked and fluffed * - 3 c
- minced scallions green onions - 4 item
- chopped meat, cooked shrimp, chicken, beef, pork - 1 item
- eggs can use Egg Beaters equivalent of 4 eggs - 3 item
How to make fried rice:
*Cook old fashioned rice (brown or white) the day before and refrigerate.When ready to make Fried Rice, remove rice from refrigerator and fluff. Heat oil in skillet. Toss in 3 cups cooked rice and stir until hot. Add minced scallions, salt (if desired) and meat. Mix well; push rice mixture to sides of skillet and break into the skillet 3 eggs. Scramble them in the middle of skillet until half cooked, then blend with rice mixture. Sprinkle with soy sauce. Serves 3.
