Fried eggplant

- salt - 1 item
- oil - 1 item
- plain yogurt - 1 item
- tomato - 1 item
- eggplant - 1 item
How to make fried eggplant:
Peel and slice eggplant. Soak in large bowl of salted water for 5 to 30 minutes. Dry between paper towels. Fry slices in small amount of hot oil. Remove and salt to taste. Chop tomato and sprinkle on top of slices. Top with yogurt. Serves 6 to 8.Recipe categories: Appetizers, Side dish, Vegetables.
