  • sugar - 2 c
  • cinnamon
  • vanilla - 2 tsp
  • salt - 1/2 tsp
  • water - 1/2 c
  • nutmeg - 1/2 tsp
  • soda
  • buttermilk - 3/4 c
  • shortening - 1 c
  • sifted flour - 3 c
  • margarine - 1 Tbsp
  • allspice - 1 tsp
  • pecans, chopped - 1/2 c
  • Cream shortening and sugar
  • large eggs or 5 medium - 4 item
  • butter flavoring or rum - 1 tsp
  • fresh apple, finely chopped or grated - 1 c
  • fresh apples, crushed or grated - 1/4 c

How to make fresh apple pound cake:

Preheat oven to 325°. Cream shortening and sugar. Add eggs, one at a time. Add extracts. Mix well. Sift flour, spices, salt and soda and add alternately with buttermilk. Fold in apples and pecans. Blend well. Pour into a 10-inch stem pan that has been greased and dusted with flour. Bake at 325° for about 1 hour and 20 minutes or until toothpick inserted into center comes out clean. Do not overbake. Remove cake from pan while still hot and brush on icing with pastry brush, covering top and sides.Icing for Fresh Apple Pound Cake:1 c. sugar1/2 c. water1 Tbsp. margarine1/4 c. fresh apples, crushed or grated1/2 tsp. vanilla1/2 tsp. butter flavoring or rum1/2 tsp. cinnamon Combine all ingredients. Bring slowly to a boil, stirring constantly. Let boil 1 minute, then apply to cake while still hot.
