Fiesta tamale pie
Ingredients/Components
- milk - 1 c
- salt
- eggs, well beaten - 2 item
- cornmeal - 1 c
- clove garlic, minced - 1 item
- chili powder - 2 3
- can whole kernel corn, drained - 1 oz
- small onion, chopped - 1 item
- can tomatoes - 1 oz
- shredded cheese - 1 c
- ground lean beef
- to 24 pitted ripe olives - 20 item
How to make fiesta tamale pie:
Heave oven to 350°. In large skillet, cook and stir ground beef, onion and garlic until meat is brown and onion is tender. Drain off fat. Stir in tomatoes, corn, olives and seasonings; heat to boiling. Pour into an ungreased baking dish, 8 x 8 x 2-inch or 2-quart casserole dish. Mix cornmeal, milk and eggs and spoon onto meat mixture. Sprinkle cheese on top. Bake 50 to 60 minutes or until golden brown. Makes 6 to 8 servings.Recipe categories: Low cholesterol, Low calorie, Healthy 2.
