Fiesta tamale pie
Ingredients/Components
- milk - 1 c
- salt
- margarine - 1 Tbsp
- eggs, well beaten - 2 item
- clove garlic, minced - 1 item
- chili powder
- ground beef - 1 lb
- grated Cheddar cheese - 1 c
- pitted ripe olives - 18 item
- small onion, minced - 1 item
- can whole kernel corn - 1 lb
- corn meal - 1 c
- bulk pork sausage - 1/4 lb
- , drained - 1 can
How to make fiesta tamale pie:
Heat oven to 350°. Saute onion and garlic in hot margarine until yellowish. Add meat and brown. Pour off any excess fat. Add vegetables and seasonings. Bring to a boil. Pour mixture into square baking dish (9 x 9 x 1 3/4-inch). Press olives into mixture. Combine corn meal, milk and eggs. Spoon over filling. Sprinkle with cheese. Bake 1 hour.
