Fiesta corn casserole
Ingredients/Components
- salt - 1 tsp
- eggs, beaten - 2 item
- chopped green pepper - 1/4 c
- dash of pepper - 1 item
- chopped ripe olives - 1/4 c
- grated Cheddar cheese - 1 c
- cracker crumbs - 1 c
- dash of Tabasco sauce - 1 item
- chopped canned pimento - 1/4 c
- can cream-style corn - 1 oz
- can whole kernel corn - 1 oz
How to make fiesta corn casserole:
Combine corn, olives, pimento, onion and green pepper with eggs and seasonings; add cracker crumbs and cheese and mix thoroughly. Pour into 2-quart baking dish. Bake at 350° for 30 to 35 minutes. Makes 6 to 8 servings.Recipe categories: Vegetables, Corn, Casseroles.
