Feather light muffins
Ingredients/Components
- sugar - 1/2 c
- milk - 1/2 c
- salt - 1/2 tsp
- flour
- baking powder
- egg - 1 item
- shortening - 1/3 c
- butter or margarine, melted - 1/2 c
- ground cinnamon - 1 tsp
- ground nutmeg - 1/4 tsp
How to make feather light muffins:
Topping:1/2 c. sugar1 tsp. ground cinnamon1/2 c. butter or margarine, melted In a mixing bowl, cream the shortening, sugar and egg. Combine dry ingredients; add to creamed mixture alternately with milk. Fill greased muffin tins 2/3 full. Bake at 325° for 20 to 25 minutes or until golden brown. Let cool 3 to 4 minutes.Meanwhile, combine sugar and cinnamon in small bowl. Roll warm muffins in melted butter, then in sugar mixture. Serve warm. Yields 8 to 10 muffins.
