Ingredients/Components

  • sugar - 3 c
  • salt - 2 tsp
  • flour - 5 c
  • buttermilk - 1 qt
  • baking soda - 5 tsp
  • salad oil - 1 c
  • beaten eggs - 4 item
  • box Raisin Bran flakes 7 1/2 c - 15 oz

How to make ever ready muffins:

Mix bran, sugar, flour, soda and salt in a large bowl. Add eggs, oil and buttermilk; mix well. Store in covered container in refrigerator and use as desired. Keeps in refrigerator up to 6 weeks. Bake a few at a time if needed. Fill muffin tins (greased or lined with paper cups) 2/3 full. Bake in a preheated oven at 400° for 15 to 20 minutes.

Note: If desired, 3/4 cup more raisins may be added. Freezes well after baking. Makes 3 1/2 dozen regular size muffins.
