Enchiladas
Ingredients/Components
- flour - 2 Tbsp
- water - 1 c
- shortening
- chili powder - 1/2 Tbsp
- ground beef - 1 lb
- salt and pepper - 1 item
- onion, chopped - 1 item
- ground cumin - 1/2 tsp
- corn tortillas - 1 doz
- Cheddar cheese - 1 lb
- chili pepper - 2 tsp
How to make enchiladas:
Sauce:2 Tbsp. shortening2 Tbsp. flour1/2 Tbsp. chili powder1 c. water In frying pan, brown the ground beef and onion. Add chili powder, salt, pepper and cumin. In a saucepan, heat shortening. Add flour and stir until fully coated with grease and flour has turned brown. Add chili powder and water, stirring constantly to a smooth texture. Keep adding water, depending on the thickness desired. Dip each tortilla in sauce. Place in oblong cake pan. Add to center of each tortilla the meat and cheese. Roll it and arrange in cake pan. Top with remainder of meat, cheese and sauce. Bake at 350° until cheese melts.Recipe categories: Poultry, Meat, High calcium.
