Ingredients/Components

  • ground beef - 3/4 lb
  • refried beans - 2 c
  • garlic powder - 1/8 tsp
  • medium onion, chopped - 1 item
  • salt - 1 tsp
  • shredded Cheddar cheese - 2 c
  • tortillas - 12 item
  • tomato sauce
  • garlic - 1/4 tsp
  • chili powder - 1 2
  • dried oregano - 1/2 tsp

How to make enchiladas:

Chili Tomato Sauce:3 1/2 c. tomato sauce1/4 tsp. garlic1 to 2 Tbsp. chili powder1/2 tsp. dried oregano1 tsp. salt Combine tomato sauce ingredients and simmer for 30 minutes.

Brown beef and onion in skillet. Stir in refried beans, salt and garlic powder. Heat until bubbly. Place 1/3 cup beef-bean filling on each tortilla and roll up. Place, flap side down in baking pan with 1/2 chili tomato sauce in bottom of pan. Pour remaining sauce evenly over tortillas. Cover with shredded cheese. Bake, uncovered, at 350° for 15 to 20 minutes.
