- salt - 2 tsp
- water - 2/3 c
- dry mustard - 2 tsp
- paprika - 1 tsp
- Cheddar cheese, shredded - 3 c
- frozen leaf spinach - 3 boxes
- Cook spinach in medium saucepan over low heat
How to make eggs florentine:
Preheat oven to 350°. Cook spinach in medium saucepan over low heat. Drain well. Place hot spinach in greased pan. Make a depression for each egg in spinach. Break 1 egg in each depression. Prepare Cheese Sauce. Pour over eggs and spinach. Bake 35 minutes or until done.Cheese Sauce:1 1/2 c. heavy cream2/3 c. water3 c. Cheddar cheese, shredded1 tsp. paprika2 tsp. dry mustard2 tsp. salt In top of double boiler, combine all ingredients.
