Ingredients/Components
- egg, beaten - 1 item
- Ritz crackers, crushed - 3/4 c
- mayonnaise - 1/2 c
- onion, chopped - 1 item
- Cheddar cheese, grated - 1 c
- cream of mushroom soup - 1/2 c
- large eggplant - 1 item
How to make eggplant casserole:
Peel, cube and cook eggplant; drain and mash. Mix with soup, egg, onion, mayonnaise, 1/2 of cheese and 1/2 of cracker crumbs. Pour in buttered 2-quart casserole dish. Top with remaining cheese and cracker crumbs. Bake at 350° for 35 minutes.Recipe categories: Side dish, Vegetables, Casseroles.
