Ingredients/Components
- eggs - 2 item
- salt and pepper to taste - 1 item
- seasoned bread crumbs - 1 item
- eggplant - 1 item
- garlic and grated cheese - 1 item
How to make eggplant balls:
Cook and drain escarole (save a little water). Saute several cloves of garlic and remove from oil*. Add penales, capers, red hot seed and a few fillets of anchovies to oil*. When penales become tan and anchovies dissolve, throw over escarole. (If needed, add saved water.) Serve hot with Italian bread.You can add grilled sausage pieces to this for a different taste.
