Eggnog pie
Ingredients/Components
- sugar - 1/3 c
- vanilla extract
- salt - 1/8 tsp
- cornstarch - 2 Tbsp
- cold water - 1/2 c
- confectioners sugar - 1/4 c
- unsweetened chocolate, melted
- envelope unflavored gelatin - 1 item
- whipping cream - 2 c
- chocolate curls - 1 item
- eggnog - 2 c
- Pillsbury pie crust - 1 item
- + 1/4 c - 2 Tbsp
How to make eggnog pie:
Will need large pie pan.Sprinkle gelatin over water to soften. Mix 1/3 cup sugar, cornstarch and salt; gradually stir in eggnog. Cook in double boiler, stirring constantly, until thickened. Remove from heat and stir in softened gelatin until dissolved. Divide filling in half and add chocolate plus 2 tablespoons rum to 1/2 of filling. Pour into cooked pie crust and place in refrigerator to cool.
After allowing remaining 1/2 of filling to cool completely, add vanilla and 1 cup whipped whipping cream. When all is cooled and set, pour the 1/2 of the filling with the whipped cream on top of the chocolate layer. Whip the remaining 1 cup of whipping cream, adding 1/2 cup rum and confectioners sugar. Top pie and add chocolate curls. Absolutely delicious!
