Dirty rice
Ingredients/Components
- chopped celery - 2 c
- long grain rice - 3 c
- salt and pepper to taste - 1 item
- bunch green onions, chopped - 1 item
- bunch parsley, chopped - 1/4 item
- large red onions, chopped - 2 item
- each chicken livers and gizzards - 1 lb
- chicken backs - 4 item
How to make dirty rice:
Chop the livers and gizzards. In a large saucepan (5-quart), combine livers, gizzards and chicken backs. Cover with water. Bring to a rolling boil. Reduce heat and simmer until meat comes off bones. Remove bones. Add remaining ingredients, except riceRecipe categories: Beef, Pork, Beef organ meats.
