  • sugar - 3/4 c
  • cinnamon - 1 tsp
  • salt - 1 tsp
  • flour - 1/4 c
  • cold water - 4 5
  • shortening - 3/4 c
  • dried apricots - 1/2 c
  • white vinegar - 1 Tbsp
  • medium-sized apples - 8 item

How to make deep-dish apple pie:

In a large bowl, mix cinnamon, 3/4 cup sugar and 1/4 cup flour. Peel and thinly slice apples. Place in bowl with sugar mixture. Chop apricots and toss with apples and sugar mixture. Set aside.

Combine flour, salt and sugar. With pastry blender cut in shortening to resemble coarse crumbs. Sprinkle vinegar and water (a tablespoon at a time) into mixture, mixing with a fork until pastry is just moist enough to hold together.

Roll dough on a floured surface making it 4 inches larger than a deep 1 1/2-quart casserole dish. Put pastry into dish, allowing it to hang over the side. Spoon apple mixture into shell and dot with butter. Fold pastry overhand up and over apples to enclose filling partially. Brush pastry with milk and sprinkle with sugar. Bake at 400° for 1 1/4 hours or until apples are tender.
